    A fine collection of sometimes excessive Cajun and Creole recipes stripped down to their very basics. Some of them a bit too much for my taste or needs. However, the book does include useful information and techniques for cutting fat, salt, etc. I would add small amounts of oil or fat to some of the recipes. It adds little in the way of calories but the fat tricks the tongue into thinking it's eating something much more rich! It's happy to taste the fat, but it doesn't know it's only a tiny amount! But it makes a big difference in flavor and feeling satisfied when you're cutting calories!
