      These muffins have a lovely light crumb and delicate citrus flavor. I baked them the full 30 minutes to get the tops golden and the inside done but the bottoms were a bit dark. Next time I will move the oven rack up a notch and use a lighter colored muffin pan. I did add one drop of lime oil to the glaze to perk up the citrus flavor. Next time I will try adding a drop each of lemon, lime and orange oil to both the batter and the glaze along with the extracts called for. The amount of glaze was about double what I could put on 8 muffins so I froze the extra and would only make a half batch of glaze in the future.

      p. 62 – I had 2 chipotle sausages that had been lingering in the freezer so thought that they’d make a good substitute for the chorizo in this appealing breakfast dish that I flagged immediately after seeing the lovely photo in the book. Very simple to put together, we thought of this as a frittata. I don’t think I’ve ever added tomatoes to an omelette or frittata before however we really liked the freshness they brought to the dish. Caramelized onions were also a nice addition. We loved this and felt the possibilities were endless in terms of the various meats you could use as an alternative to the sausage.       p. 67 - Good recipe. Frittata started on cooktop then finished in oven. Goat Cheese c/b replaced w ricotta or buffalo mozzarella.

  • Classic white birthday cake with chocolate frosting

      Used this frosting on cupcakes. It is very good and rich. Melted quickly when trying to put it on the cupcakes with a pastry bag. Have to work fast! We are eating them tomorrow so we will see how it goes. Very easy to make. Made as the chocolate flavor.
