      This is indeed the perfect ragu. Unusual ingredient was the chicken livers. They added a richness and depth of flavour. Go easy on the salt - remember this one starts with lardons!

      I find par boiling makes the end result a bit too greasy so I skipped the parboiling stage but followed the instructions for the first fry - washing, drying and chilling the chips first - but upped the temp 10 degrees to 130C. Then I freeze loosely in vac packs and these make for awesome home made frozen chips when deep fried from frozen.

      this is my go-to recipe for brownies. the only thing i need to be careful about is over or under cooking it. which i have done and both times i’ve not enjoyed it. but when i get the timing right it is absolutely perfect.

      Really simple - chocolate, eggs, a bit of sugar - but still a bit tricky. Even adding the eggwhite in 3 lots it was still quite a challenge to get it to fold in without streaks, and my final result had a few lumps and wasn't as airy as it should be. Lovely flavour though. I used Lindt 75% dark chocolate and 1tsp amaretto.
