Notes about Recipes in this book

  • Raspberry coconut ice cupcakes

    • Melanie on March 02, 2014

These cupcakes tasted okay - not huge winners - I liked that the fresh raspberries were mixed through the batter. I paired these cupcakes with the coconut icing in Oliver Peyton's British Baking book.

  • Vanilla buttercream icing

    • Melanie on March 02, 2014

Good basic vanilla buttercream icing recipe. Need butter, milk, vanilla extract and icing sugar.

  • Nutella cupcakes

    • Melanie on March 02, 2014

Not a huge fan of this cupcake recipe - a little too dry for my liking. However, all is okay once you add lashings of the milk chocolate and nutella icing. Next time I would pair the icing with a moist vanilla or chocolate cupcake.

  • Milk chocolate and nutella icing

    • Melanie on March 02, 2014

Delicious icing recipe, would make again. Serve the cupcakes topped with ferrero rochers - this added great texture (shown in photos however not listed in recipe ingredients).

  • Carrot cake

    • Lilyinthevalley on March 06, 2021

This is the nicest carrot cake I have made. Absolutely delicious.

  • Lemon drizzle loaf cake

    • Melanie on February 15, 2015

I think this is the best lemon drizzle cake I have ever tried - great flavour, both batter and drizzle. Mixed blackberries into the batter for something different, which worked well.

    • Lilyinthevalley on August 30, 2020

Lovely light loaf cake. Very lemony.

  • Apple and blueberry loaf

    • Melanie on January 01, 2012

p142. Delicious. Needed longer in the oven but it came out beautifully.

  • Ginger loaf

    • Melanie on July 01, 2014

Delicious cake and very easy to prepare - saucepan / bowls only. I made a few substitutions as noted, which meant that I didn't have any syrup to glaze the cake with - it was still fantastic. I substituted golden syrup for treacle, brown sugar for molasses sugar, and crystallised ginger for stem ginger.

  • Chocolate and banana loaf

    • Melanie on January 01, 2012

p147. Very nice. Needed longer in the oven though. Tastes best warm as the chocolate is nice and gooey but still perfectly fine at room temp.

  • Aunt Mary's bourbon biscuits

    • Melanie on January 01, 2012

p177. These were seriously good, make again. I had to add extra water and work the dough carefully to prevent it from breaking but it all came together. The filling seems like a tiny quantity but it is just right.

    • Sparkles75 on April 09, 2019

Boys raved that these were the best chocolate biscuits I've ever made. I was a bit surprised by the level of enthusiasm for them given I do a lot of baking but definitely a make again recipe

  • Rose biscuits

    • Melanie on October 27, 2013

These were good biscuits - nice and small (perfect for afternoon tea) and the rose icing is delicious.
