    I did this as a warm version .. added the dressing to the prawns as I was cooking them and reduced it a little. Also added some coriander leaves as an addition - absolutely delish, fresh, light and really tasty.

    This was pretty average. The soy/honey dressing didn't enhance the flavour of the pomelo or prawn. I'd be tempted to do a Vietnamese fish sauce based dressing

    As a follow up to my previous note, I tried this again with a Vietnamese dressing (3 tbs fish sauce, 3 tbs rice wine vinegar, 2 tbs sugar, juice 1 lime) and it worked so much better

    This is a lovely tangy summer dessert. I made it in individual moulds and scattered the almond biscuit crumbs over the top rater than in layers

    This is a great drink for summer and not too sweet because of the limes. I added tequila instead of vodka and it was very easy to drink

• Yoghurt panna cotta with mango

    I really liked this because it was fresh and tangy, sadly it wasn't a hit with the family. As written the recipe doesn't serve 4, I had to quadruple the recipe to make 8 serves
