    More recipes from Helen Corbitt, the legendary director of restaurants at Neiman-Marcus, who introduced thousands of Texans (and others) to fine cooking. Corbitt also loved to entertain and her cookbooks are definitely written for the home cook, not the professional. The recipes produce elegant dishes, yet don't call for long lists of ingredients or techniques beyond the skills of an experienced home cook. This book is Corbitt's second and focuses on recipes and menus for impromptu, easy to prepare meals from ingredients that are readily available and likely to be on hand in a well-stocked kitchen or pantry. Corbitt was a bit ahead of her time and her recipes work today, although she doesn't stint on rich ingredients. With a bit of tweaking using ingredients that weren't available when these books were written, it's easy to lighten them up if you wish.
