Notes about this book

Corbitt was the Director of Food Services for Nieman-Marcus back in the day. She single-handedly brought many new tastes and flavors to the middle of America. She was also noted as a hostess and caterer and received several culinary awards. This book is full of tasty recipes for entertaining or every day. Amazingly, she manages to make most of the recipes quick and easy, rarely having long lists of ingredients or lengthy instructions. There are many suggested menus -- mostly for styles of entertaining that have gone out fashion. They're certainly adaptable to today's life, though, and the recipes themselves are excellent. The layout of the book is frustrating because it mixes recipes in no very predictable pattern. Fortunately, there's an index, but there are many suggestions and hints that include useful information that are unindexed, so you'll need to actually read the book at some point to glean Corbitt's considerable kitchen wisdom.
