I'm surprised this isn't still in print! Corbitt was the Food Director for Neiman-Marcus and rather ahead of her time. She wrote numerous cookbooks, but this one contains the recipes she developed for Neiman's luxurious spa, the Greenhouse. Corbitt's was a trained dietitian and nutritionist as well as a chef, and these lavish recipes reflect that. As you'll see, diet food doesn't have to be boring! The recipes are varied and delicious, all aimed at satisfying dieters with 850 calories per day. Corbitt makes it easy by laying out 4 weeks of menus with almost no repeats in order to keep her spa goers interested. These recipes work today for anyone wishing to lose weight while still enjoying their meals and not feeling hungry!
