Notes about Recipes in this book

  • Roasted beet and blood orange pico de gallo

  • Rocket, cherries, Marcona almonds and Parmigiano-Reggiano

    • Pamsy on June 09, 2020

Changed this quite a lot but it was excellent. No cherries so used a nectarine cut into eighths. Used whole blanched almonds which I toasted and chopped roughly. Added 6 slices of Parma ham, 12 santini cherry tomatoes, avocado and made an Italian Salad Dressing from Ballymaloe. Really enjoyable.

  • Greens, chorizo hash, lemon aioli and boiled eggs

    • Pamsy on January 16, 2020

This was different and tasty. I used 2 Waitrose fresh chorizo sausages, which I skinned and chopped into 5/6 pieces. Not as strong tasting as Spanish chorizo but it's what I had In the freezer. Didn't have new potatoes so used Bartlett's red which was fine. Aioli was good. Worth repeating.

  • Cracked potato salad with garlic and fresh herbs

    • Pamsy on March 29, 2018

Not sure where to start with this recipe. Perhaps with the fact that although garlic is in the title it fails to make an appearance in the ingredients! Unfortunately I did not notice this whilst cooking. However, the other ingredients failed to shine and the finished dish was completely tasteless. Very disappointing!

Forgot to add that in my opinion it's completely unacceptable for a recipe to have an omission such as this. Which is why I wouldn't buy Sweet.

Publishers Text

Everyone loves a salad - full of fresh ingredients, simple to throw together when you're short of time and packed with nutrient-rich fruit and vegetables and lean protein and nuts. However, in spite of this, salads can often start to feel repetitive, high on virtue but low on appeal, and yet Mindy Fox in "The Perfectly Tossed Salad" shows that this is simply down to a lack of imagination. These recipes prove just what a humble salad is capable of. Capitalising on the huge variety available to us, Mindy conjures up pitch-perfect flavour combinations - watermelon and feta, celeriac and orange - and really gets creative. Salads like Warm Roasted Squash with Baby Leaf, Roasted Lemon and Spiced Pecan, or Wholemeal Pasta with Chicken, Capers, Ricotta and Marjoram can be a substantial meal or a light lunch, and Clams with Spinach, Spanish Ham and Sweet Shallot is certainly not out of place on a dinner party menu. With all this mouthwatering variety and versatility at hand, it's nice to think how good for us it all is too.
