      I’ve made this substituting cantaloupe for honeydew. It did not congeal. I’ve also followed the recipe as written with honeydew and the melon layer still did not congeal.

  • Open-face Vietnamese chicken sandwiches

      This was very good. Omitted pickles (by mistake) - would add again. Also omitted cilantro. Served as regular sandwich instead of open faced. Added fresh sliced cucumber batons. Sirachi mayo gave a nice kick.

      An easy, old-fashioned dinner. I fried eggs each evening to place atop the potato mixture rather than baking the eggs. I really liked this.

      I liked this but feel it could be improved with an umami burst. I added diced garden fresh tomatoes but next time will also add fresh shaved Parmesan cheese.

  • Chicken and feta sausage

      I found this to be a touch salty. Since this is not a dry aged sausage and it stays refrigerated, I would reduce the salt next time. I also think this would be perfectly fine as a sausage patty.

  • Smokin' potato salad

      Reading the recipe, I wasn't sure if all the flavors would work together but this is quite yummy. However, making this inside on a grill pan required multiple batches of cooking the potatoes and took longer to put together.
