      I had some hazelnuts and salmon fillets, found this recipe in the EYB library and gave it a try. Compared to a similar Eating Well Magazine recipe that calls for roasted broccoli and salmon topped with chopped pistachios, this one was less flavorful and included many more steps. The brushed on mustard and honey stood out the most of all the elements. The photo shows very finely chopped pistachios to the point you cannot tell they’re pistachios, but directions just call for chopped. I ended up chopping my hazelnuts to a medium texture so they’d adhere. That worked well. Probably won’t repeat because I can sub the hazelnuts in the Eating Well recipe, which is less fussy and creates a better tasting result.

      I microwaved the leeks instead of boiling. I also used a lot more oil to fry. They came out very good. Will make again.

      I used Udon noodles for this. Noting that I am completely new to Asian noodles :) I found the recipe quite classic Asian fare, nothing special though nice enough. I mean, I fell into it because I had broccoli and mushrooms to use up, but you could really do it with any vegetable.

I found a similar one here : https://oursaltykitchen.com/roasted-fennel-salad-apple-radicchio/ So I did this salad, without the radicchio, because I first wanted to try out the griled fennel and apple combination. Honestly, I felt it was a little boring, I should have added the radicchio! I used walnut oil instead of olive oil (I mean from my replacement recipe) because i decided to make the salad more interesting by adding walnuts crunches. I think the radicchio and some cheese would also make a great addition.

      Very original salad! I had never made carrots that way and that is definitely cool! The flavours go well together, and the result is very pretty and undoubtedly packed with vitamins! I served it with Bayonne smoked ham and a little toast for a light lunch. I will definitely make again!
