  • The ultimate strawberry margarita (Bartender's recipe)

      This is quite nice, with the Aperol adding a different twist of flavor to what can sometimes be a flat-tasting margarita. Since I was trying to use up some strawberries that I had already sliced and macerated with some sugar, I just added more sugar to taste in the puree. I assume that the total amount wasn't as much as what was recommended in the recipe.

      Good but expensive due to prickly pear puree. Might work better if you could find fresh and make your own puree. You could definitely taste the hibiscus in the tequila.

  • Green chile "pickled" chayote

      A simple quick chayote pickle with lime, jalapenos, and rice vinegar. I went light on the jalapenos as all other ingredients are mild. While simply typical of a well balanced quick pickle, this is well worth repeating as a surprising pickle element.

  • Smoky spiced cashews

      These are easy to caramelize because they are baked rather than stirred on the stove top to coat. When they just came out of the oven, I added a bit granulated sugar to give a crunchier coating. Change the seasoning up for a little variety.
