  • Lime splice cheesecake

      This recipe is absolutely delicious and is a definite "make-again". It's also very quick and easy to make. The lime jelly sherbet which is sprinkled on top is a winner. I added a bit more icing sugar but that is personal taste.

  • Slice of chocolate with caramelised peanut ice cream

      The chocolate biscuit crumb base and crumbled topping were rather gritty on this otherwise silky smooth dessert. Next time I would use chocolate pastry and omit the crumbled topping. Also, the slice does not need the added flavour from the peanut ice cream (which I bought rather than made) a good quality vanilla ice cream would complement the slice very nicely.

  • Homestyle beans with smoky bacon and maple syrup

      The flavour of these was good but the mixture was too watery. I added pork sausages to the mix and eggs. Next time I would add some quartered baby potatoes to soak up the liquid and bulk out the meal.
