  • Classic croissants

    • Wanahca on May 03, 2017

The plain pastry is very bland and tastes stale (despite the freshness of the flour and quality butter). I'll probably not use this recipe again.

  • Feta, roasted pepper, and basil muffins

    • chawkins on July 24, 2015

Very good savory muffins to use up some of the basil from the garden. Instead of buttermilk, I used a 50/50 mixture of non-fat yogurt and 2% milk and it worked out fine. They go well with soup or a main course salad.

  • Chocolate-banana marble bread

    • Thredbende on August 10, 2011

This is a refreshing riff on banana bread using chocolate instead of the usual spice. It is pretty, bakes in a 9X5 loaf pan, freezes well, and kids love it.

    • chawkins on May 03, 2019

Very nice loaf, not very banana-y, and not overly chocolate-y either, well balanced. Very detailed instruction, may be even fussier than Rose Levy Beranbaum: two lightly beaten eggs were added to the butter/sugar mixture one tablespoon at a time.

  • Herbed chicken pot pie

    • sabrina7 on November 17, 2010

      Freezes well.

  • Vanilla bean cheesecake

    • loehmichen on November 01, 2019

Very well written recipe, excellent step by step instructions with professional level tips. Oven temp running 25 degrees hotter. Turned it down to 300. Took cake out after 60 minutes w 2-3 inches of center wiggly. Cooled and refrigerated 24 hours. Center was a little soft like very thick custard sauce. No matter, everyone raved! Delicious.

  • Easy morning muffins with raspberries

    • Technicolor Kitchen

These were my third attempt at raspberry muffins: ...(the others) were disappointing, these however, are perfect: delicious, tender and the raspberries don’t get mushy in the batter.

  • Classic croissants

    • David's Table

I followed Ms. Mushet’s every word to the 't', and too my astonishment produced some pretty amazing croissants if I have to say so myself...They were pretty close to the ones from my local bakery.

Publishers Text

The stakes are simply higher when it comes to baking. A less-than-stellar soup or sauce can be saved at the last minute with an extra pinch of salt or some fresh herbs, but bad baked goods tend to be total disasters - a tough piecrust, a heavy cake, an unrisen yeast dough - and leave you with little to do but dump them into the trash and start again. So when a baking book in which the recipes perform as flawlessly as they do in The Art and Soul of Baking.
