  • Elderflower lemon cake

      Elderflower is excellent and if you haven't tried it before you're in for a treat, however this cake is far too sweet - even after reducing the sugar by 3/4 c. I replaced the Greek yogurt with Icelandic yogurt (skyr) and doubled the zest. The cake holds its shape nicely, which is a plus. Since the cake itself was so sweet I didn't add the glaze, but paired it with homemade meyer lemon curd.

      This has a nice flavor is very simple to make - especially if you have nasturtium in the garden. The leaves also make delightful taco shells.

      I really wanted this one to work out, but I have to admit despite all of the work of picking little petals and brewing them in the end it really tasted mostly of pectin. After several quasi-misses or disappointments with this book I am beginning to think it's a beautiful book that just doesn't deliver. There's so much potential, so I haven't given up yet. I'm infusing my lilac sugar now.
