      Quick to do, tasty. I only had hot curry powder so I reduced the quantity down - of course it was still a bit hotter than it should have been. I blended the sauce as that's how my daughter likes it. Recipe is for 4 - and the sauce just wasn't enough for us. Chicken yes, (we are 3 and they had yummy fried chicken sandwiches for work), however I will definitely double the sauce next time. Already bought the mild curry powder so I can do it properly. If you are prepping fresh breadcrumbs and then toasting - up the quantity - I had to zap some GF bread and I was scrabbling for just enough to cover the chicken. I stupidly didn't think the quantity would decrease as much as it did. Definitely a do again.

  • Thai green curry

      Few subs on this one, onions not shallots, ginger not galangal (can never get this), thigh meat not breast... Anyway, very easy when the processor does all the work. Instructions missed out what to do with the 3rd tbsp of fish sauce, which I'm glad about because it would have been too salty. Needed the spritz of lime and extra coriander before serving. Will do again and be braver with the chilli. I still have nightmares about a Ken hom Thai green chilli which was UNBELIEVABLY spicy!

      Mine were too big, so next time I'll make 10 rather than 8. My daughter also wanted them more sausage shaped, so you can fill them easier. I couldn't taste them as I'm GF, but now I've made them normal, I'll have a go at GF version. I did rush the proving, so I think they could have have been a bit lighter. So easy. Used the base of my yoghurt maker to put the bowl on to prove them, don't know why I didn't think of it sooner.
