Notes about Recipes in this book

  • Pork and apple pie with cheddar-sage crust

    • inflytur on March 14, 2020

A fabulous dinner. Serve it with a side salad for a complete meal. I double the spices. If you want to skip making the pastry, sauté the apples with sage and sprinkle shredded cheddar over the pork layer.

  • Pan-seared salmon with cider-glazed onions

    • jumali on March 30, 2012

I felt the onions and cider overwhelmed the salmon--probably better suited to a pork dish.

  • Baked apple oatmeal pudding

    • jumali on October 20, 2011

I thought this was pretty bland--needs something more--bacon? bourbon?

  • Apple-stuffed biscuit buns

    • emiliang on March 16, 2014

Use unsalted butter for the filling as well as the dough, and mix only 1 tsp of salt with the flour. Otherwise these are WAY too salty. Also, the author says that her biscuit dough is a time saver when compared to yeast dough. I am not convinced.

  • Apple pumpkin walnut muffins

    • emiliang on February 03, 2013

Nice combination of flavors. These are great to bake on a chilly fall or winter morning.

    • inflytur on October 22, 2017

Absolutely delicious. The flavors meld well. I cut back the cloves to ¼ tsp and added ¼ tsp cardamom. Batter doesn’t rise much. Fill the cups generously if you like ample muffins. Page 173.

  • Oatmeal-topped apple crisp

    • rpepper on May 19, 2018

      A great topping.

  • Swedish apple pie

    • AngelNewsi on October 24, 2013

One of the easiest apple pies I've ever made and it gets rave reviews every time. I was so surprised at how good it was the first time I made it. My go-to apple for pie making is the Cortland variety. The last time I made this I made two versions - one with my Cortlands, the other with Idareds. Both were fantastic, though I definitely prefer the tartness of the Cortlands over the sweetness of the Idareds. I certainly wouldn't decline a slice of either!

  • Skillet apple pie

    • emiliang on September 24, 2016

Made only a third of the recipe and baked it in three one-cup ramekins. Perfect single-servings!

  • Apple bread pudding with salted caramel sauce

    • emiliang on October 03, 2013

Taste was good, but it felt like it needed more batter. Came out a bit dry.

  • Simple apple nut cake

    • hibeez on October 19, 2017

I made this in a 9" pan, and it came out great; baked for the same amount of time (although my oven might be off - check at 25 min). Very easy and quick to make.

    • inflytur on February 10, 2021

This is a truly great snacking cake. It is the perfect way to use up those sad apples in the bottom of your fruit drawer that are no longer nice for eating but are still perfectly good. It remains moist even when left on the counter. I've had it in a covered cake stand for four days and it is just as tender and delicious as the first day. I used an 8 inch round pan and it made a nice tall layer.

  • Caramelized apples

    • emiliang on October 03, 2013

AMAZING on top of a Dutch Baby pancake! Comes together in about 15-20 minutes start to finish.

  • Morning glory muffins

    • Arctic Garden Studio

They are really great, nice and moist due to the apples. The great thing is that you can trade out ingredients...The apples really are the key, so I wouldn't recommend leaving them out.

These are very durable muffins... they have been slowly disappearing at breakfast each morning. They seem to be holding up beautifully, still as fresh as the day I made them.

Publishers Text

The most complete cookbook for enjoying and cooking with apples.

The Apple Lover's Cookbook celebrates the beauty of apples in all their delicious variety, taking you from the orchard to the kitchen with recipes both sweet (like Apple-Stuffed Biscuit Buns and Blue Ribbon Deep-Dish Apple Pie) and savory (like Cider-Brined Turkey and Apple Squash Gratin). It offers a full-color guide to fifty-nine apple varieties, with descriptions of their flavor, history, and, most important, how to use them in the kitchen. Amy Traverso also takes you around the country to meet farmers, cider makers, and apple enthusiasts.

The one hundred recipes run the spectrum from cozy crisps and cobblers to adventurous fare like Cider-Braised Brisket or Apple-Gingersnap Ice Cream. In addition, Amy organizes apple varieties into cooking categories so that it's easy to choose the right fruit for any recipe. You'll know to use tart Northern Spy in your pies and Fuji in delicate cakes. The Apple Lover's Cookbook is the ultimate apple companion.
