• Grilled spicy paneer skewers (Paneer tikka)

    This is one of my favourite dishes to make. The yogurt does wonderful things to the paneer and the spices are just perfect. I found that the oil can be severally scaled back though.

• Aubergine and Indian broad bean curry (Renghan lilva)

    Pg 110 - to make this a more healthy option I missed out nearly all of the 100ml of oil with no detriment to the dish and used frozen broad beans. This was a lovely curry and one I'll be making again soon.

• Tamarind, tomato and potato curry (Bombay bataka)

    To be McDougall compliant, I dry-toasted the spices rather than tempering them in oil. There is a bit lost in translation without the tempering, but the balance of flavors is still lovely. To speed things up, I put the potatoes in the InstantPot and they were ready by the time the sauce was well simmered. Will make again.

    I didn't have waxy potatoes but mealy was fine. Taste was great. I only used about 2/3 of the oil. Other recipes have way less oil and this had butter too!

• Pea and cauliflower curry (Wattana and flower)

    Realized too late that I only had 1 green chili, but I enjoyed this very much anyway. It needed a little extra time on the stove to soften the peas fully and I reduced the asafoetida to a pinch.

• Curried red and yellow lentils (Tarka dhal)

    Delicious. Pure comfort food. I served it with naan and roast cauliflower and broccoli or a simple weeknight dinner.

    Beautiful, bright and packs one hell of a punch. Hot, with those chillies, and uplifting.

  The Patel family own one of the best Indian restaurants in Bradford, curry capital of the UK (must visit). Love this book, it's the kind of approachable Indian vegetarian home cooking I like.
