Although 35 years old, this still works as a great introduction to proper Italian pasta cookery and whenever I see a copy in a secondhand shop, I buy one for a friend. Some super, simple, tasty stalwarts in here: puttanesca, zucchini, onion and sausage & carrot pasta sauces are all reliable. A great present for a student too.

Spicy tomato sauce (Salsa piccante col pomodoro)

  This is a good store cupboard recipe which I seem to have overlooked for years! Interesting spicy flavour which I assume comes from the red wine, red wine vinegar and black pepper. Would be good with meatballs as well as pasta. Made double the quantity and froze 2 tubs.
Egg noodles with smoked salmon and cream (Fettuccine al salmone)

  Easiest pasta dish ever and so tasty. Can use double or single cream. Top with chives or parsley for added colour.

Moulds of thin pasta (Vermicelli in timballini)

  Added grated Red Leicester to the bechamel which gave a better flavour. Needs thinner as opposed to thicker sauce. Quite easy to turn out (run a knife around the edge and lift out with a spoon). For the tomato sauce, 2 cloves crushed garlic, 400gr tin chopped tomatoes, seasoning and half tsp sugar. Cook for 40 mins and blitz with stick blender. Made a lovely light supper with a mixed salad to start.
