      Saw a great looking version of this on Dale Pinnock's facebook page. He used orange peppers and served with garlicky sweet potato mash. I also added some green beans which worked well with the dish.

      This was really good as a pretty quick & easy weeknight veggie dish. I also added some mushroom to the chickpea mix, and used cheddar instead of blue cheese on top. Made a separate portion for myself the first night, then left the remaining assembled traybake in the fridge ready for the next day. Works well as a prep ahead dish!

      Substituted crumbled feta instead of the goat's cheese. Tastes great but high in calories. Might try a low-fat pastry next time.

      Not a keeper; the crumble is way too dry and powdery, I needed to add double the amount of oil to sort of bring it together. After half an hour in the oven it still didn't look very appealing, so I ended up drizzling a bit of honey over. Also found the ratio of crumble to fruit wasn't right (too much crumble). It's not inedible (the toddler quite likes it in fact), but it just doesn't hit the right notes for me and the OH (even with bearing in mind that this is a healthy, dairy-free version).
