  • Beef stew

      This was an excellent stew. I don’t have coconut cream so I used 1/2 cup regular heavy cream. It was just right. Total cooking time was closer to 3 hours, and I only had 2 pounds of the beef.

  • Pesto roasted chicken

      Made just the pesto (minus garlic). Pumpkin seeds made quite a good nut replacement. Needed a little water to loosen from blender.

  • Vanilla-vanilla layer cake

      Made as cupcakes - quartered recipe for 6 but they were huge so may have overfilled the cases slightly. I used caster sugar for beet sugar. First attempt at 160c took forever to bake and rose but then collapsed so tried again at 175c. These rose beautifully but I didn't love the flavour - not sure if it was the baking powder, xanthan, chickpea flour or a combination of all. Probably could have done with more vanilla. Made with maple frosting from same book.

      I made a half-recipe of this cake and felt that it was fine for what I needed it for: a child's birthday party that needed to accommodate many allergies. The texture of the cake was a little too dense, but nothing that 4 yo children cared about when accompanied by great frosting and loads of sprinkles.

      Made maple frosting with vanilla cupcakes - the maple taste isn't strong. Made a good straightforward sweet buttercream though.

  • Pumpkin pancakes with coconut maple syrup

      While I didn’t love the pancakes (a little too chewy for me and dense), they were a hit with the GF madre. The coconut cream maple syrup, however, was fabulous and I would repeat in an instant. Just mix 2-1 heated maple syrup to coconut cream for a decadent pancake topper.

  • Grilled skirt steak with chimichurri

      A really delicious way to serve skirt steak. While I normally don't find that marinades add all that much to a final product, this one definitely did. Chimichurri is always delicious and I enjoyed the addition of a tomato and red onion salad (I used shallots) to the side. I'd make it again, for sure.

  • Carrot salad with chile-sesame vinaigrette

      Delicious and easy carrot salad. Didn't take the time to add the optional toasted sesame seeds or chives and we still loved it. Used honey instead of agave (listed as an option), and kept all measurements the same. Definite repeat! Served with stir-fried green beans (from Slanted Door) and Curried Fish (from Pok-Pok).

  • Greek lemon, chicken and rice soup

      A quick and easy, but still flavorful, soup for a weeknight. The lemon really comes through nicely. Cut in half, the recipe served two adults and a child perfectly. Even using just a boneless, skinless chicken breast (what I had to hand), the flavor was good (although I did use homemade stock). Didn't have quite enough parsley, but supplemented with some dill, and used pink rice instead of white. Both changes worked well.

      This was SO GOOD. I omitted the parsley. The lemon flavor really elevated the soup.

    The recipes...do not include gluten, dairy, eggs, soy, peanuts, tree nuts, shellfish or cane sugar. If you have allergies to these ingredients, this will be a book you’ll want...to keep on hand.
