      This simple salad was a positive surprise, would be a nice side to any BBQ.

      I made this for a light lunch for 2 at the height of peach season. Super simple to throw together but tastes complex. I had some good bread and chevre so I toasted the bread and spread it with cheese and piled the salad on top. That put it over the top!
