      This is an excelllent muffin - more like a complete breakfast meal. Some work for sure but worth the results . Also makes 24 and freeze very well

      I baked the coconut-crusted cauliflower rather than frying it. We liked the sauce combined with the pineapple salsa. My only change would be to add a sprinkle of cotija or similar cheese to provide a bit more savory flavor since the coconut and salsa were both sweet.

      Delicious! The pulled "pork" was very good, but the flavor really depends on using a quality barbecue sauce. I used regular butter and mayonnaise, so this was vegetarian for us. This would be a great recipe for summer. Will repeat.
