Notes about Recipes in this book

  • Chocolate-studded pumpkin bread

    • breakthroughc on January 10, 2021

I made it as written and it was good. A very healthy sweet bread.

  • Showstopping baked spinach and artichoke dip

    • breakthroughc on January 01, 2025

This was rich, creamy and luscious. Eaten happily by all at a New Year gathering where I’m the only one that avoids dairy. As written I think it is too much sauce for the amount of vegetables. I added a second can of artichoke hearts. I did not add more spinach as I was afraid it would be too watery. Next time I will use frozen spinach and thaw it and squeeze it dry before adding. I used the tapioca starch and Trader Joe’s Vegan Whipping cream in place of the milk. Would definitely make again.

  • Crazy good carrot cupcakes

    • breakthroughc on March 13, 2021

Not crazy good. I used the Spelt flour, applesauce and brown sugar. The were very dense and crumbly and much more of a muffin than a cupcake. Very hard to frost and I had to serve them with a fork as the just fall apart. Kind of bland as carrot cake goes. However the cream cheese frosting is very good and I will use the frosting recipe again.

  • Peanut butter nutter chocolate cake

    • breakthroughc on May 06, 2023

A rich, decadent, moist and delicious vegan chocolate cake. Highly recommend this one. Non vegans will enjoy it too. I used applesauce and Chobani extra creamy oat milk. The picture doesn’t match though, I don’t know how you could possibly get that color of frosting using natural peanut butter. I used the full amount of milk and mine was more of a frosting than a glaze.

  • Saucy salted caramel chocolate brownies

    • breakthroughc on January 10, 2021

These were really rich and decadent. I cut it into 9 pieces and it was a little too much served with non dairy ice cream and the sauce. I would do 12 pieces next time. I'm not vegan, but have a good friend that is dairy free. This is a good dessert to make everyone happy and the caramel sauce is really good for being vegan.

  • Cheesy Brazil nut "Parm"

    • breakthroughc on January 01, 2025

This is fabulous. I will sprinkling it on all type of food. Next time I will process a little further next time as I have a few chunks of nuts which definitely lose the parm quality of the topping.
