      Nice and plenty of vitamins - except, except I had the idea myself for this salad a few weeks ago. In which at the time I added dried cranberries and pistachios. I even pretty much did the same dressing except it was with lemon juice and standard Dijon mustard. I followed the recipe this time, but I actually prefer my version, or maybe with squash seeds on top.

      Those are both simple and amazing. The curry shines through, married perfectly the rest. It is also an healthy option you can serve at a party, and the filling is quite reusable (in a chicory leave, as a roll topping for ham or salmon, in a sandwich, as a dip etc.)

      I just made and ate this using fish and courgette instead of crab and cucumber. It was nice and indeed, light. I think alternatively to verrines it would be very nice as a topping to avocado using half the avocado as a bowl...

      I cooked this as a side to a green frittata and it was OK, but way too simple to warrant a recipe in my opinion. Anyway it served its purpose and was pleasant indeed !

      This is light all right, and changes a little with the water chestnuts and pineapple additions. But, it is very bland and boring! Would need to add chillies, coconut milk, at least.

      I didn't think much of this recipe before making it and I was wrong! I subbed turnips for squash, and used taleggio for cheese as I had some to use up (which kind of defeated the "light" recipe but well :)... Anyway this was great, kind of like a chicken hachis parmentier, with a crisp sweeter flavour from the apples and this creamy potato on the top and indulgent melted cheese. I halved the recipe and had about four little ramequins (so I probably made smaller portion than intended) which I served with a side salad for a light lunch.
