Notes about Recipes in this book

  • Pork and apple pie with cheddar-sage crust

    • inflytur on March 14, 2020

A fabulous dinner. Serve it with a side salad for a complete meal. I double the spices. If you want to skip making the pastry, sauté the apples with sage and sprinkle shredded cheddar over the pork layer.

  • Cider-braised pork with Calvados and prunes

    • lkgrover on June 26, 2025

Good pork roast with prunes & savory sauce. I modified to a non-alcoholic version (non-alcoholic cider, no Calvados). At the end, removed the pork & added cornstarch to the sauce to thicken.

  • Cider-brined pork chops with mustard pan sauce

    • lkgrover on October 05, 2022

Excellent autumn main course. I marinated the pork chops overnight.

  • Pan-seared salmon with cider-glazed onions

    • jumali on March 30, 2012

I felt the onions and cider overwhelmed the salmon--probably better suited to a pork dish.

  • Baked apple oatmeal pudding

    • jumali on October 20, 2011

I thought this was pretty bland--needs something more--bacon? bourbon?

  • Apple-stuffed biscuit buns

    • emiliang on March 16, 2014

Use unsalted butter for the filling as well as the dough, and mix only 1 tsp of salt with the flour. Otherwise these are WAY too salty. Also, the author says that her biscuit dough is a time saver when compared to yeast dough. I am not convinced.

  • Apple pumpkin walnut muffins

    • emiliang on February 03, 2013

Nice combination of flavors. These are great to bake on a chilly fall or winter morning.

    • inflytur on October 22, 2017

Absolutely delicious. The flavors meld well. I cut back the cloves to ¼ tsp and added ¼ tsp cardamom. Batter doesn’t rise much. Fill the cups generously if you like ample muffins. Page 173.

  • Sausage, apple, and cheddar strata

    • lkgrover on November 12, 2024

Delicious strata, which makes a special breakfast casserole. I used pork breakfast sausage links, which I cut into 1/2 inch pieces (bite-size). Most of the preparation is done the night before baking, so a good choice when hosting company.

  • Oatmeal-topped apple crisp

    • rpepper on May 19, 2018

      A great topping.

    • lkgrover on February 23, 2022

Good traditional apple crisp, with an abudance of apples. The pecans are a great addition.

  • Swedish apple pie

    • AngelNewsi on October 24, 2013

One of the easiest apple pies I've ever made and it gets rave reviews every time. I was so surprised at how good it was the first time I made it. My go-to apple for pie making is the Cortland variety. The last time I made this I made two versions - one with my Cortlands, the other with Idareds. Both were fantastic, though I definitely prefer the tartness of the Cortlands over the sweetness of the Idareds. I certainly wouldn't decline a slice of either!

  • Apple pie with crumb topping

    • lkgrover on November 29, 2024

Excellent apple pie with a pecan crumb topping. Enjoyed by all at my Thanksgiving dinner.

  • Skillet apple pie

    • emiliang on September 24, 2016

Made only a third of the recipe and baked it in three one-cup ramekins. Perfect single-servings!

  • Apple bread pudding with salted caramel sauce

    • emiliang on October 03, 2013

Taste was good, but it felt like it needed more batter. Came out a bit dry.

  • Simple apple nut cake

    • hibeez on October 19, 2017

I made this in a 9" pan, and it came out great; baked for the same amount of time (although my oven might be off - check at 25 min). Very easy and quick to make.

    • inflytur on February 10, 2021

This is a truly great snacking cake. It is the perfect way to use up those sad apples in the bottom of your fruit drawer that are no longer nice for eating but are still perfectly good. It remains moist even when left on the counter. I've had it in a covered cake stand for four days and it is just as tender and delicious as the first day. I used an 8 inch round pan and it made a nice tall layer.

  • Apple tea cake with lemon glaze

    • lkgrover on September 28, 2021

Good apple loaf cake; easy preparation. Perfect for afternoon tea or coffeecake.

  • Caramelized apples

    • emiliang on October 03, 2013

AMAZING on top of a Dutch Baby pancake! Comes together in about 15-20 minutes start to finish.

  • Applesauce-pistachio bundt cake with cider glaze

    • annabelle_dc3563 on April 18, 2026

There's a typo! The recipe states 1/3 cup of pistachios (160 gms). I weigh everything when I bake and 160 gms of pistachios is 1 1/3 cups of pistachios. 1/3 cup pistachios is a bundt cake would barely be noticed so I'm going with the larger amount. Also, if anyone else likes to weigh things when baking, 1 1/2 cups of apple sauce weighs 383 gms.

  • Vietnamese-inspired apple-fennel salad

    • Lepa on May 13, 2025

We loved this salad. It makes a lot so next time I may make half for my family of four.

Publishers Text

The Apple Lover’s Cookbook is more than a recipe book. It’s a celebration of apples in all their incredible diversity, as well as an illustrated guide to 70 popular (and rare-but-worth-the-search) apple varieties. Each has its own complete biography with entries for best use, origin, availability, season, appearance, taste, and texture. Amy Traverso organizes these 70 varieties into four categories?firm-tart, tender-tart, firm-sweet, and tender-sweet?and includes a one-page cheat sheet that you can refer to when making any of her recipes.

More than 100 scrumptious, easy-to-make recipes follow, offering the full range from breakfast dishes, appetizers, salads, soups, and entrees all the way to desserts. On the savory side, there’s a cider-braised brisket and a recipe for Sweet Potato–Apple Latkes. On the sweet side, Amy serves up crisps, cobblers, pies, and cakes, including Apple-Pear Cobbler, Cider Donut Muffins, and an Apple-Cranberry Slab Pie cut into squares to eat by hand.

As bonuses, The Apple Lover’s Cookbook contains detailed notes on how to tell if an apple is fresh and guides to apple festivals, ciders, and products, as well as updated information about the best times and places to buy apples across the United States, making it easy to seek out and visit local orchards, whether you live in Vermont or California.

First published a decade ago, now newly revised and updated, The Apple Lover’s Cookbook is your lifetime go-to book for apples. 110 color illustrations
