      I used any old green lentils out of the cupboard, and I think it would have been better with best quality ones. The carrots picked up the flavours very nicely and the tahinii sauce was superb.

      It looked like a burnt, disgusting mess - but the taste redeemed it. It was better cold and left overnight to give time for the flavours to mix.

      Brilliant recipe, made it two days in a row and absolutely loved it. It's filling and veg heavy and low effort for a summer evening. I'll admit both times instead of giant couscous I used a pre-made pack of mixed rice and grains, really i think the grain element is very adaptable. I also love a very punchy lemon so i sliced, roasted with courgette, and then ate the slices (the juice seeps into the dressing.) Obviously a charred lemon half a more widely-liked option if you're not a sour fiend

      The best potato salad I’ve ever had. It’s one of my all-time favourite salad recipes and definitely something I’d serve to guests!
