  • Roasted curry powder

      This appears to be a restaurant quantity that wasn't broken down properly for home kitchen use. I made half the recipe, and it still made enough curry powder for a couple of years' supply. The timing given also appears to be questionable. The directions called for roasting the spices on medium heat for 15 minutes, but I had to pull mine off after 5 minutes at that heat level or they would have burned.

      I made a fifth of a recipe and still ended up with a big quantity, but it's not that big a deal given that it is really nice and can be used in many dishes, I will use this one instead of store bought curry powder.

      These were delicious. Made the dough for the vegetable roti and had some leftovers. I always struggle with breads but these were a breeze to make and the texture was perfect.

      fabulous curry. The roasted curry powder makes it - complex, layered, nutty flavour - absolutely delicious. Will be making frequently! One note for those like my husband, who don't like 'bits' in their curry (but I love), it uses whole spices - so fishing them out before serving ends up being necessary...

      I was excited about making this dish and scoured the city, looking for curry leaves and pandan leaves, which are not widely available in my area. The result was good but not spectacular. I'm not sure the extra work and ingredients in this dish were worth the effort compared to more simple chicken curry recipes. I would also add more spice if I was going to make this again. A big warning: The Roasted Curry powder used in this recipe is time-consuming to make and makes a restaurant-sized quantity. If I was going do this again, I would just use my everyday curry powder. I have the Kindle version of Hoppers and there appeared to be some typos in the recipe (1tsp in the list, vs 2tsp listed in directions, 1Y tsp listed as a quantity.

      absolutely delicious. melt in the mouth meat, cooked in a rich spicy gravy. Did without the garnish but will add next time. YUM.

      really quick once the prep has been done; the finely chopped veg make all the difference; i added prawns marinated like the chicken and was substantial and delicious! will make again
