      This was very good with delicata squash. I think it needs a splash of wine in the dish - you can spare a little from your glass!

      A nice combination of flavors in this casserole, a little spicy, hearty & filling. Not being vegan, & not being crazy about cheese analogs, I just used dairy products to make the cheese sauce. This could be a good dish to bring to a potluck.

      We're not big puff pastry fans, so we use a vegan pie crust instead and make turnovers. We also add dried cranberries and chopped broccoli to the filling. Good stuff!

      This was good & went over well at a large family Christmas Eve gathering, but it was lacking something. While writing this, I see that the maple syrup for the roasted veg was forgotten, which may have contributed to the slight blandness, but also the dressing seemed wimpy to me. I like the idea of this salad, but will have to fiddle with it to get more flavor.

      A healthy, sturdy stew, with a nice combination of flavors. I had to cook it more speedily than suggested (remember to read the directions first!), but it didn't seem to suffer too much from that. Using the Spanish paprika gave it a mellow, smoky flavor. Very filling & great for a chilly night.

  • Lemony asparagus risotto

      The lemon in this risotto really livened up the flavor quotient. There are some problems with the recipe, however. This is oven-baked risotto. I should have known better, but there is no mention of getting the liquid to boiling before putting it & the rice in the oven. After 30 minutes in the oven, it was barely cooking & only had 30 minutes to go, plus more liquid to be added. No way was it going to be finished. I ended up dumping it all in a pot to get it boiling for a few minutes, then finishing in oven. The texture ended up more like porridge unfortunately. I also would suggest using a somewhat larger casserole dish than suggested.

      Sort of a taco salad version of potato salad; good flavors which will ultimately be influenced by the salsa you use....

      Good stuff. If you want it spicier, add some minced chipotles in adobo, or some chipotle tabasco. If not, I'd add a teaspoon or two of smoked paprika to get the right smokey flavor.

      Cooked a variation on this last week. Stock instead of wine. Popular with all. M didn't like the roasted peppers. Pre-sliced olives would be quicker.
