      This was easy and delicious. We served it alongside tempura prawns. The recipe suggested 15 minutes for prep but give yourself extra time as everything needs to be finely chopped beforehand. However once you start the stir fry it goes quite quickly.

      The photo in the book isn’t very appealing but I’m glad I tried this. The mushroom crumble is almost meaty in taste and texture and this is vegan friendly. Would make a great dish to take to a potluck.

      First time I made this as written. Second time I used a red pepper, left out the tomatoes and added some sliced chestnut mushrooms with the sauce. Also used some cannellini beans and used toasted sesame seeds instead of peanuts. With a squeeze of lime it was an extremely tasty dish. For me the aubergine is non negotiable but I can see myself using this formula often as it is quick to put together and adaptable.

      Tasty, easy and reasonably quick to throw together. My husband thought the lemon dominated, but he’s not a fan of citrus. I can see how you could substitute another protein such as tofu or poultry if you preferred. I would certainly make this again.

      Very easy and relatively quick. I added some mushrooms to bulk it out a bit. Not spicy at all so adjust as necessary.
