    I couldn’t bring myself to put in the whole cup of sugar and only put in half. It was sweet but not overpoweringly so. We thought it was the perfect sweetness with that amount paired with salty-ish couscous.

• Marinated lamb kabobs (Qodban)

    Excellent marinade for lamb. For one pound of lamb, I cut the olive oil in half, kept the other ingredients the same, except for at least doubling the amount of cilantro. Cooking time on my grill was less than stated in the recipe.

• Flemish beef-and-beer stew (Carbonnades à la Flamande)
