This 9 spice blend works well in place of cinnamon on rice pudding and in place of cardamon in a spiced bun.

I love seed cakes and this one IS exceptionally good. I will be making this a lot! I didn't have golden caster sugar so I used regular but I bet it would have been even better with golden caster sugar.

I'm not sure I loved this one. What I liked - texture with some extra baking time made for a nice chocolate chip cookie. I'm not sure the garam masala and ginger went well together with the chocolate chips. Will they go to waste? Of course not! Will I make again? Probably not due to my personal preference.

  • Baked apricots with maple & fenugreek

    • rmardel on June 05, 2025

I really loved this! The fenugreek brings a smokey, nutty flavor to the syrup, which is not very sweet, but just enhances the tart/sweetness of the apricots. The maple/floral/nutty/smokey notes enhance and elevate the fruit in subtle ways. I also like that the yogurt cream is not sweetened. Complex and subtle, the dish walks an intriguing line between sweet and savory that I find compelling but which may not be loved by those with a greater sweet tooth than mine.

  • Tangy lemon & juniper bars

    • Idril on July 15, 2024

Lovely lemon bars - I didn’t make the recipe in the main description and instead did the suggested “spice swap” using fresh lavender from my garden in the base. I found the base biscuit layer needed about ten minutes longer than written to turn golden, and did about 25 mins with the top layer. I ran out of lemon so had to bulk it up with a bit of orange but the lemon turned out predominant anyway. I am not so sure how it was supposed to turn out - I’d have appreciated a note on this in the recipe description. Should they be fully set or more like lemon curd? At any rate mine turned out with a thin set top and a gooey lemon curd centre with a crumbly lavender base and they’re delicious. They are zingy but very sweet - would still be delicious with a bit less sugar in the lemon mix. Would make again for sure. Very simple little bites. I’m not sure I’d do the juniper/gin inspired version as I’m not a gin and tonic fan at all and the lemon lavender combination is super.

Publishers Text

Celebrating the love story between sugar and spice, this stunning new volume from award-winning cookbook author Eleanor Ford presents eighty spice-infused recipes for desserts and baked goods and a guide to spice switches so you can master classic flavor combinations and open the door to new possibilities.

Spice is often the party girl: the loud, bold, exuberant element in the mix. When married with sugar, spice can provide a delicate fragrance that gives backbone to a dish and deepens its allure. Just as a generous swirl of woody-sweet cinnamon elevates a simple bun, a fiery gingerbread is a wonder in the mouth, nutmeg cuts through the sweet creaminess of custard to make a more rounded tart, and a whisper of cardamom makes poached plums jaunty and interesting.

As international spice expert Eleanor Ford shows in A Whisper of Cardamom, flavors can be enhanced by a thoughtful addition from the spice drawer--added not in shouts, but in whispers. With her signature blend of curiosity and exploration, Eleanor returns with another brilliant study of spice that will help you infuse elegance and complexity into sweet treats. Divided into flavor profiles like bright and zippy, floral and fragrant, and dark and spicy, A Whisper of Cardamom is a cookbook designed to inspire creativity and experimentation. In addition to eighty recipes for sweets such as saffron macaroons, roast strawberry soufflés, and violet cream chocolate pots, spice swaps will help you customize dishes and discover worlds of flavors, and exquisite, inspiring photos are throughout.
