    These were okay but the thick batter meant they were a bit soft in the middle. Not undercooked, just not the texture I prefer. My husband and I thought these were a bit too sweet but when we added a dab of creme fraiche on top it balanced the flavors beautifully.

    Used half the amount of ginger and nutmeg as these spices tend to quickly overpower the flavor for me. I also added more milk since the batter seemed a little thicker than I like. The pancakes were tender and fluffy. Definitely worth making again!

    Made using a pie plate preheated with butter in the oven using half the recipe. Mine was done in 12 min. Little more denser in the middle than I expected but has a good flavor. Served with fresh cut up pineapple pieces. Very easy to make and perfect for a family sized brunch.

• Cardamom half-pound loaf cake

    The cardamon flavor was lovely, but my cake was a bit dense and dry. I baked it 10 minutes longer than the recipe stated as the it took that long before the top wasn’t wet and a toothpick came out clean. My friends liked it, but I don’t think I would make again. Served with blackberries and whipped cream.
