      This was delicious! I served it over pasta, and I didn't miss the traditional breading at all. I followed the instructions to pound the breasts to even thickness, and I think this is important for good results. I used pre-sliced fresh mozzarella on top, and this worked well. The leftover chicken wasn't great (it got a bit dried out being reheated), but I used some of the leftover sauce by itself with pasta and that was very good.

      This was really tasty and popular with the kids-- and so fast and easy to put together. Saucier than I'm used to with sloppy Joe's-- you will definitely need a spoon, but that was clear from the photo and was expected. The only thing I would change would be a bit less sugar-- it was just a little bit too sweet, even for our 11-year-old (my sous chef). :) Older sibs were fine with it as is, and we even got a few bites into our picky 4-year-old. Maybe go with 75% of the sugar to start and then 50% if needed. The mustard powder added a nice note to it.

      Very good, and one of the better sloppy joes recipes I've tried. It was perfect for a quick weeknight meal, served with colelaw. I agree with gamulholland's note on the sweetness - I cut the sugar in half and it was plenty sweet enough.

      Did not like this recipe. It's the first fail I've had from this cookbook. I tried it since I loved the skillet lasagna from their first cookbook, but this just didn't do it for me. The sauce came out too bland and the cooked flour tortillas a little too mushy. (I'd change it to corn tortillas if I ever tried it again.) The cream cheese didn't work as specified in the recipe - it didn't melt into the sauce, it just stayed as chunks that would not blend in. It might work better with room temp cream cheese that was beaten before adding. (I added it cold from the fridge.)

      I love this recipe and it has worked for us every time. Sometimes I go a different route and use chorizo (the raw sausage kind that I remove from the casing and brown like ground beef. I often add a can of rinsed black beans and sometimes a bunch of roughly chopped spinach mixed into the beef and tomatoes. It is easy to under season this recipe so do taste as you go. My kids love eating it with a big green side salad and some crunchy tortilla chips. I’ve also skipped the cream cheese if we are out and although is is obviously less creamy it doesn’t make a huge difference.

      Loved this dish, especially the sauce! Very quick and easy, if you have thinly sliced pork. The sauce would be good with chicken, too, or probably just about anything other meat.

      Loved this dish. Quick, easy, and tasty. Even my six year old liked it. We had it with some jasmine rice that we added to the wraps when assembling.

      Very delicious, very easy. One of those dishes that surprises you with how tasty it is, with such simple ingredients and prep. Really great for a weeknight.

      Really good, big hit with the kids, and I do recommend pulling the bread crumbs out a lot earlier than the cauliflower, which I did, and it turned out great.

  • Roasted cauliflower with turmeric and lime

      I used baby cauliflower, but otherwise followed the recipe. I didn't love this. Turmeric always tastes like dirt to me, so I was hoping the lime and red pepper flakes would hide the flavor a bit more than they did. Not a repeat for me.

      I think I've found a new favorite banana bread recipe. This turned out great! Wonderfully moist and flavorful, made with vegetable oil and sour cream (no butter in this one). Beautiful brown, crispy top. Excellent.

      This banana bread is amazing. So moist-and no mixer required. I've had many banana breads sit around, uneaten, but this one vanished quickly. I'm sure the chocolate chips helped.
