    It’s a simple technique, but works very well. The tenderloin was perfectly cooked. It was great with the Shallot-Balsamic Sauce with Rosemary and Mustard that is on the same page.

    Just made the glaze for the drumsticks. I think we would have liked a little more cayenne. The drumsticks were quite sticky when cooked. We liked them but not one of my favourite recipes.

    12/25/20: Christmas dinner. For us, I'd pull once it hits 130, not 125. The shallot butter is delicious. Also, remind me to buy butcher's twine... ;)

    Just made the roast. Basted with apple sauce instead of peach sauce. Took much longer to get to temperature but roast was very tender and tasty

• Grill-roasted sirloin roast with garlic and rosemary

    Made this with a 3 lb. sirloin steak (about 1 1/2" th.). Simple rub to put together and excellent flavor. Cooked on BGE after pre-heating for about an hour, took approx 25 min with lid closed. Will make again.

    12/25/20: Christmas dinner. It's a baked potato! Baked these prior to putting the roast in and then pulled them. Once the roast was resting, I brushed them with oil and returned to the oven to reheat.
