  • Zesty zucchini bread-and-butter pickles

      An interesting and quite delicious bread and butter pickle. I’ve never seen one with zucchini before, and it worked. The recipe notes it will be quite sweet, so I cut the sugar by half. It was on the upper edge of my sweetness tolerance — could have used yet less.

      This was nice but I wouldn't rush to make it again. The resultant dish is quite sweet (although the headnotes suggest it is usually sweeter). This needs more water to ensure there is sufficient syrup at the end. Next time I would reduce the ratio of prunes and cranberries to carrots.

      This is the best goulash I have ever made. The seasoning is perfectly balanced and more complex than in many recipes.

      Yes, I'm experimenting with vegetable patties/latkes. There was no chance that potato/roasted garlic wouldn't be a big hit. So I split the recipe in half and used black garlic in one half. This may not be the best use of black garlic but the contrast between the roasted garlic and black garlic was worth repeating. Vegetable oil? You're kidding - bring out the schmaltz. I served with sour cream rather than applesauce.
