Notes about Recipes in this book

  • Potato chips

    • twoyolks on February 08, 2021

These were great potato chips. They had a slight rosemary flavor that worked well. I only had rosemary and I removed the fried leaves from the branch and spread them over the chips.

  • Tagliatelle in a white ragu (Tagliatelle al ragù bianco)

    • twoyolks on January 14, 2021

A nice if very spare ragu. It felt like it could really use some more dairy at the end, whether milk, cream, butter, or more cheese.

  • Roast pork and peaches

    • dosojosazules on August 07, 2023

Used a 2lb loin, needed to brown longer in pan than recipe indicated. Otherwise loved it and the combination of peaches, potatoes, and cipollini onions was very good. My loin rendered very little juices so I relied on extra olive to mix everything with the dijon

  • Bean and pork shoulder soup from Trieste (Jota Triestina)

    • twoyolks on January 22, 2021

This was just alright. There simply isn't enough flavor in the broth to make this great.

  • Beef ragù with soft creamy polenta

    • dosojosazules on April 30, 2024

This turned out nicely. Took longer than the recipe indicated to reduce the liquid. 3 quarts seems excessive

  • Strawberry tart

    • twoyolks on October 14, 2023

The flavor of the tart is good but the tart dough is quite possibly the most difficult to work with tart dough ever. It stuck to everything, including the bottom of the tart pan.

  • Brovada

    • twoyolks on January 22, 2021

Pickled turnips are not for me.

Publishers Text

An eye-opening exploration of a unique region of Italy that bridges the Alps and the Adriatic Sea, featuring 80 recipes and wine pairings from a master sommelier and James Beard Award-winning chef.

Bordered by Austria, Slovenia, and the Adriatic Sea, the northeastern Italian region of Friuli Venezia Giulia is an area of immense cultural blending, geographical diversity, and idyllic beauty. This tiny sliver of land is home to one of the most refined food and wine cultures in the world and yet remains off the grid. The unique cuisine of Friuli is what inspires the menu at Frasca, a James Beard Award-winning restaurant in Boulder, Colorado, helmed by master sommelier Bobby Stuckey and chef Lachlan Mackinnon-Patterson.

Meaning "branch" or "bough," the word frasca refers to the Friulian tradition of hanging a branch outside the family farm as a sign that you had new wine to sell. Friuli Food and Wine celebrates this practice and the wine and cuisine of Friuli through eighty recipes and wine pairings. Dishes such as Gnocchi with Quail Ragu and Thyme, Branzino Crudo with Herbs, and Friulano Bean Soup with Braised Pork Shoulder are organized by The Land, The Sea, and The Mountains, while profiles of local winemakers and wines, including Tocai, Ribolla Gialla, Malvasia Istriana, and Verduzzo, open up new pairing possibilities. Showcasing the best Friulian wines you can buy outside of Italy as well as restaurant and winery recommendations, this beautifully photographed cookbook, wine guide, and travelogue brings the delicious secrets of this untouched part of Italy into your home kitchen.
