      This was absolutely delicious! I cooked the shallot with the bacon. Used mint, chives and parsley. Didn’t have Gruyère so used Parmesan with the Cheddar. Very rich and soft crumb.

      Oh my word, love spanakopita so was very excited about trying this. And it was excellent, prefer it to spanakopita now! Unusually I didn’t have lemons so I used the skin of a preserved lemon. So delicious - crunchy, juicy, cheesy, minty, lemony and nutty from the seeds on the pastry.

      Much easier than a traditional moussaka! Very delicious, savoury meat sauce. A bit juicier, quite a bit of gravy at the bottom of the pan, soaked up with bread

      As it’s quite fatty/salty with chorizo, to help balance it out and also make it more of a meal than a side dish, I’d add rice in the future or pilaf.
