      I'm not sure I used the right ratio of ingredients as I used what I had, the full package in some cases (227g mushrooms, 140g spinach etc...) but the flavour was very good. I added some pasta cooking water towards the end to prevent it from being too dry.

  • One frittata, two frittata

      This was an easy way to use up some cooked potatoes. The flavour was good and we liked that the vegetables remained tender-crisp. I used 4 eggs in place of egg substitute.
