    Cream of macadamia nut soup (pg 223) is from Costa Rica. Think boiling a chicken with vegetables; puree the vegetables; cube the chicken; add ground macadamias, thickening, heavy cream -- garnish with chopped nuts, cilantro, and sweet paprika. Sound good? I thought so and was very pleased with the results.
