  • Cheddar and chicory salad

      A really nice salad! Liked how the (few) different ingredients worked together, and the dressing looked really pretty on the light coloured foods! Made the mistake of prepping the salad about an hour before eating, which turned the leaves slightly soggy, so note to self not to be too impatient next time. And would also reduce the quantity of walnuts by a quarter or so.

      Don't think this really works as a salad. It's basically just a main meal with different bits. Wasn't overly impressed!

      This was nice enough, but I found it quite oily.

  • Beetroot, feta and asparagus salad

      Nice salad - replaced the watercress with baby chard and used dill instead of fresh oregano. Recipe sounds like a good template for other substitutions, like PSB for asparagus, and whatever fresh herbs are on hand. Used only one lemon for the dressing and added the zest - made it all very citrus-y and refreshing.

      Boil potatoes, assemble - dinner's done! I will be making this on those weeknights when you have no time for anything. This evening I used this as a side for cold smoked salmon, and some sliced garden-grown tomatoes from a neighbour. Delicious!
