      Made as a side dish for Mother's Day with family. It was pretty good. I substituted normal food for most of the ingredients. The recipe actually calls for low-fat sour cream, diet margarine, and liquid egg substitute. Eggs are no longer considered bad for us (I used liquid eggs, not a substitute). And I won't even use regular margarine, let alone the diet kind. As you may have guessed, I used regular sour cream. That is how I cook. I am 71 and have never needed to take a statin. My good cholesterol is high and my bad cholesterol is low. I realize it doesn't work that way for everyone...What I go easy on are sugar, processed foods, and super-processed foods. Stepping off soapbox now.

      This was a quick, easy, and tasty chili. It was a tad salty from the canned goods so one could read labels closer to find low-salt versions. It did taste better the next day. I do question the number of portions it would make, seems high.
