      This one made for very nice leftovers. We had it as a main dish the first night, but the leftovers are nice as a side or a snack. I find seeding tomatoes to be a bit of a chore, but I greatly prefer fresh tomatoes over the acidity of canned tomatoes--so I still opted to do it.

      Came out a little mushier than I was expecting--probably because I used two small avocadoes instead of one large. But the flavor was good--even better the next day, surprisingly.
