    Khandvi (pg 40) is a besan flour roll made with buttermilk (or yogurt/water mixture). I used the yogurt/water version. The instructions fail to indicate how thin to spread the cooked mixture or how quickly one must work to get that thinness. So, my first batch was a bit of a mess both in looks and texture. My second try, I worked quickly and used a large workspace, so the resulting rolls had many thin layers. Absolute bliss with motivation to experiment with the toppings.
