  • Orange and passion fruit cake

      A good recipe however could be improved. The cake isn't particularly special and the real winners are the orange syrup and passionfruit icing. The cake came out slightly denser than I would have liked. I used canned passionfruit for the icing but should have stuck to fresh passionfruit as the recipe instructed. Need to let icing sit for a little before applying to the cake.

      This was a nice tangy alternative to the standard lemon drizzle. The passionfruit icing was lovely and really completed the cake. I used passionfruit puree instead of fresh and I also added some to the orange syrup.
