  • Grapefruit poppy seed snack cake

      I made this earlier today and was really looking forward to a slightly different citrus twist. I really enjoyed the combination of ground almond and polenta and thought the texture of the cake was lovely. I didn’t garnish the cake with more grapefruit as hoped that the grapefruit zest in the cake and the juice in the glaze would be enough. This was a mistake, though, as I could not detect any grapefruit at all. I’m a bit disappointed by that because a lemon poppy seed cake does not need to be served with lemon for the flavour to come through. The grapefruit I used tastes lovely on its own but this as not carried through in the cake itself. Not sure I’d make this one again.

      This sounded great and was quite easy to prepare but I didn’t like the cake part that much. It turned out quite dry and crumbly despite the custard and dulce de leche. But I still like the idea. I would try the toppings with the Classic Tres Leches Cake from Snackable Cakes by Jessie Sheehan which would have been perfect with this.

      Make a half batch (8x8) as I had some leftover pumpkin to use up. Super easy cake with lovely flavor and texture. It’s not a tall cake (could probably do the full size in the smaller pan if you wanted more height. Frosting was also fast and good.

      These are excellent and as promised quick and easy to make. I streamlined the recipe even further and used the crust/streusel recipe from the Raspberry Cheesecake Streusel Bars in Edd Kimber‘s other book One Tin Bakes, which has you melt the butter and stirring everything together with a fork instead of dirtying the food processor. Will be making these many more times this summer.

      I wasn’t a big fan of these & prefer his raspberry version. It was easy but as mentioned it did soften in a day. It tasted like an oatmeal cookie with hints of blueberry which is good if that’s what you are wanting.

      This seemed a bit bland. I wanted more flavor from both the filling and especially the base/topping.

      These were nice, but a little too sweet perhaps. I think they need a bit of extra salt and maybe an extra 50g of pecans?

      Very solid PB cookie recipe in slab form. The raspberry jam adds a delicious tartness. Great potluck dessert! My PB white chocolate drizzle did not work, it seized up and was not drizzle-able. So I did without and it was still fantastic. I can see how the drizzle would really take these over the top!

  • Sesame milk chocolate shortbread

      Used regular butter and dark chocolate and did not cut the dough before baking. I made only half a recipe and pressed the dough into a parchment paper lined 8x8 tin, froze it for 10 minutes before baking and cut it right after baking while still soft. The cookies crisped up perfectly afterwards. I also tempered the chocolate before dipping the cookies into it but realize of course that tempering is not something you would have your audience do in a cookbook which has the word Easy in the title.

      Used regular dairy butter, a mixture of roasted black and white sesame seeds, and semi-sweet chocolate chips. The dough was very dry and didn't come together, needing another tablespoon of melted butter mixed in. Didn't have time to temper the chocolate for a better finish. Very crisp texture once cooled and a little crumbly.

      I enjoyed these quite a bit and they were well received at the pot-luck I brought them too. -I was a little short of tahini and made up the difference with peanut butter (probably around 1/8 cup) -I think I might do dark or bittersweet chocolate on top next time. Or perhaps just cut down the brown sugar or corn syrup down slightly as after I added the top layer I did think it pushed a little past perfect into overly sweet.

      This was a hit with colleagues, with some coming back for more. Buying a bag of the Heath bits in the baking aisle is cheaper and easier than chopping up a Heath bar yourself. Be sure to leave at least a few inches of space between while baking - they spread a little more than expected. Bakes up soft and fluffy looking before the cut. Cools to a nice chewy texture.

  • Summer mango tiramisu

      Relies on delicious fruit. Quicker than a classic tiramisu because no whipped egg whites. Slicing up the mangoes is the longest task. Next time I'll use an Amaretto or rhum. Really loved it. Tastes light but decadent. Good choice if chocolate-heavy desserts aren't your jam.

  • Chocolate dipped honeycomb

      I was really scared to make this but it turned out great! I didn’t dip in chocolate because it was good on its own. Sort of tastes like toasted marshmallow. Be sure that your baking soda and cream of tartar is sifted before mixing in. There were a few small lumps in my finished product.

      My son’s friend’s favorite breakfast at our house. Easy to customize, can sprinkle chocolate chips, blueberries etc on different t sections. Makes quick work for Christmas morning too.
