      This was surprisingly good, particularly in winter with a fish/poultry main. After searching I infer salads with combinations of these ingredients (with additions ranging from cumin, paprika, chili, parsley, arugula, & mint, to ricotta) seem to be traditional from Sicily to Morocco. This version seems to be as simple as it can get.

      The simplest of salads, you hardly need a recipe. But if you have garden-fresh tomatoes, this is the best way to eat them.

      I feel dense for never having thought of using bagged baby carrots for this purpose. I've made other glazed carrots that were a lot sweeter, so if you want a more sticky glaze, you might want to increase the sugar. If you're counting calories, though, or looking for a healthy but tasty vegetable side, this is definitely a quick and easy option.

  • Sautéed scallops with garlic and parsley butter

      I didn't chop parsley powdery-fine as it appears in the photo accompanying this recipe. So, when it came time to pour the melted parsley-garlic butter over the scallops, I strained it first. A whole stick of butter was overdoing it; I think it would be fine to make half as much of the sauce.

      An easy recipe if you have buttermilk on hand. I like that there is no baking powder in these biscuits, as I often don't like the metallic aftertaste baking powder can cause.
