Stan Frankenthaler was one of my culinary school instructors, and he's an amazing chef. This book is a great introduction to Asian ingredients and cuisines. He borrows ideas from several different countries; some dishes are traditional, and Frankenthaler puts his own spin on others. You're not getting just one nation's cuisine here.

Publishers Text

From the acclaimed owner of Boston's Salamander restaurant, a volume of recipes combining American taste and creativity with Asian flavors and refinement.

Taking home-cooks on an extraordinary culinary tour, the recipes here reflect the taste and spirit of Salamander, without the task of recreating restaurant food exactly. Recipes include Black Tea-Soaked Roast Chicken, Honey and Spice-Scented Pork Ribs, Pan-Roasted Asian Vegetables with Hot Coconut Lime Vinaigrette, and Green Onion Noodle Cakes, in addition to scrumptious marinades, flavored oils, spice blends, dipping sauces, relishes, and - of course - desserts.
