Notes about Recipes in this book

  • Oven-fried chicken that's as good as fried

    • PennyG on November 02, 2013

I make this often. It is really tasty. My son even asked for this dish for his birthday dinner one year!

  • Quick brined pork tenderloins

    • Medamida on January 21, 2014

This is a great series of recipes on brining and grilling pork tenderloin.

  • The best smoked oven-roasted ribs (Outdoor/indoor version)

    • louie734 on July 05, 2015

We've made these for large crowds and small and they always come out perfectly. The easiest, most foolproof, no-mess way to enjoy perfectly cooked ribs. For just us 2, 2 racks of baby back ribs fit perfectly on a cookie sheet with foil, then a rack on top. The ribs go out to be smoked on the foil, then put the racks on top, plop the ribs on, and throw in the oven. Both the rub listed in the recipe, or an equal amount of Galena Street (Penzey's), works great. (Galena Street is tastier, but spicier - we like it, company may not.) Use plain yellow mustard to make it stick. There is no other rib recipe needed - these are tender and rich and smoky and succulent....

  • Steam-sauteed green beans with mustard cream

    • DJM on September 22, 2012

This would be a good alternative to the bland green bean casserole. Sauted a minced shallot in butter, then added the mustard and 6 tablespoons of cream instead of the 4 T called for.

  • Greek-style pasta salad

    • SugarTreeBaking on June 16, 2025

Good, basic pasta salad. I didn’t bother with the salt steps for the cucumber, used seeded Roma tomatoes instead of cherry. Mint adds a nice flavor. Used Multi color radiator pasta from Trader Joe’s.

  • French fries for the home cook

    • PennyG on February 02, 2014

These are great! Method sounds strange but it really works.

    • PennyG on May 13, 2018

Me again! I have made these countless times since I first wrote this note. Definitely my go-to method for making fries at home. No mess, no fuss, easy-peasy.

  • A chocolate cake that's got it all

    • DJM on November 16, 2017

This is a fabulous chocolate cake. Fine texture, deep chocolate flavor.

Publishers Text

Pam Anderson's infallible renditions of favorite dishes have made her America's most trusted cook. Millions know her and have come to depend on her recipes--in her weekly column, her award-winning books, and her many national television appearances. Her audience just keeps on growing. In CookSmart, Anderson returns with more than one hundred best-ever recipes that everyone needs. She knows that today's cooks don't have time for less-than-perfect results, and she is also familiar with the pitfalls that can undermine an ideal version of a dish--or keep people from making it at all. For CookSmart, Anderson has created oven-cooked ribs that are every bit as succulent as those barbecued all day over a fire, an effortless chicken Parmesan that will be an instant family hit, a pasta salad that (for once!) tastes as good as it looks, a creamy Caesar salad that doesn't rely on raw eggs, and a voluptuous chocolate cake that's as easy to make as a boxed mix. Anderson not only gives cooks impeccable dishes but in the process imparts a wealth of culinary knowledge. Her essays in the thirty-five chapters read like concise detective stories, detailing her inexorable quest for perfection.
