    During my strongest pudding phase (8-14 years old) I would never have been able to try this recipes - everyone but Dad liked their bananas unripe. No banana survived to ripen in our house. To me banana pudding was just vanilla pudding with banana slices folded in. In contrast, this is truly a banana pudding - about one banana for each serving. In addition, this is a rich pudding - half is heavy cream and it uses 6 egg yolks. The roasting of the bananas allows the banana to be spread evenly throughout the pudding rather than being chunks within a pudding. The result is a very satisfying, very rich dessert.

    ...very rich, so they have a velvety texture and feel very indulgent. They’re probably not puddings that you’re going to want to make everyday...but they are sure to be a hit any time you serve them.
